Now while I don’t necessarily recommend making this salad on a boat, that’s what I did! It’s super easy as long as you have calm seas. This salad is oh-so easy and a great way to incorporate watermelon this summer. Tell me your yours turns out!
Cut the mozzarella and the tomatoes into skinny pieces. Cut the watermelon in skinny long sheets, then put the tomato slices onto to the watermelon sheets and use a knife to cut perfect circles around the tomatoes. Stack tomato, mozzarella, basil and watermelon twice for each stack and repeat for all stacks. I added avocado to mine, but I put avocado on everything! Meanwhile pour a half cup of balsamic vinegar in a sauce pan, reduce for 10 minutes. Pour over Caprese stacks and sprinkle with salt and pepper. Enjoy! Get more of my favorite recipes here!
